NIF fails to build on Intel Mac

Not sure if I'm missing some dependencies for this, but I get errors from rustler trying to generate the NIFs. It complains about the linker not being able to find missing symbols. Seemingly most of the _erl_nif_* ones, in fact.

`crossterm` `event::read` gets no events on Windows

Everything seems to run just fine, but that blocking function never returns.

Switching it to polling still never actually gives back a value.

Testing effectively the same code with crossterm (i.e. not in a NIF) works without issue. So I have to imagine it's some flag or setting in the Erlang VM that's not playing nicely here.
