True, it's has been hard coded because of a lack of time.
The user should be able to add a server in the GUI. And those servers should be listed in a file.
osmconf.ini is a file for OGR, not for the plugin.

config.json is a step in the right direction. However, when updating the QuickOSM plugin, this file was somehow restored to the default content, so that my changes got lost. This is a bit unfortunate. May I suggest to take a look at the update mechanism? thanks!

Read https://github.com/3liz/QuickOSM/blob/master/definitions/overpass.py#L5 how to add your custom list. This list will be kept for each QuickOSM release.
