I think providing a docker file might be beneficial. I don't think I have the bandwidth to maintain a docker image.
Ideally I'd like to have the requirements of the book to be so easy to install that readers don't need docker. Ideally, after reading the book, they have a setup that they can use in the future.
It seems that installing spacy is not that easy, and there are some minor issues with graphviz.
I think it would be better to try to fix these issues upstream, for example by ensuring there's an up-to-date spacy package in the conda main distribution.
