There is no built-in deamon mode for anycable nor anycable-go; so, the approach above is the only one for now.

To record log you should specify the path to log file (for both servers):

$ bundle exec anycable --log-file "path/to/anycable.log" --server-command "anycable-go --port 3334 --log-file path/to/anycable_go.log" &

As Capistrano not really meant to be used for process management, I'd recommend defining service as systemd unit or upstart job (depending on Linux distro you're using) and then just configure Capistrano to restart service after deploy and let the operating system to do the rest. See anycable/anycable-go#51 for example

One more viable option is monit in case if you have no root privileges on your server.
