Try this out, should be working ig. I switched my router, cannot test builds for mi r3 myself anymore.

Whoops, i forgot to answer.
sed -i 's/-hidden//g' /usr/share/luci/menu.d/*.json should reveal hidden menus (use ssh to connect to your router and execute this command in the shell).
What about building ALL the packages, this would take a ton of time and resources. I guess building all the kernel modules (that get along with our platform, of course) alongside with the firmware makes more sense, because these ones cause kernel version mismatch error and block you from downloading packages that depend on them, though it will also take a lot of time and might cause some unexpected errors. I don't have much spare time to deal with this problem unfortunately, though i might consider tinkering with that somewhere in the future.

It's actually easier to just rebuild the binaries with all the packages you need included than trying to install the packages. Check this out - https://openwrt.org/faq/cannot_satisfy_dependencies

Possible Sir to have built-in sqm in your firmware? I don't know how to build and I don't have build environment.

Is it possible to build all the packages co-existing with your weekly firmware builds so we can upload them manually in luci? Is it possible to your build-script?
