It would be great if the cover device_classe.g. shutter could also be specified

Since we are discussing it here now, I guess thats the best place to answer.

Device Class:
A device_class option would do it.

Directional icon:
The icon is actually changed by the roller entity itself if you manage to set its state to opening / closing during movement. This is what is happening if you do not use the position topic and only the state topic. I did not yet find a way to set the state properly whole using the position topic. This should actually be done by the entity itself while it is changing position while opening or closing. This may well be a bug in the cover mqtt implementation of HASS, but I don't know.

Position sensor:
I was was not aware, but yes, the entity has a current_position attribute. How would that be displayed in Lovelace without building a sensor around it?
