I've hit this too. I cooked up a fix that causes the initial "crop" to encompass the full image, which counteracts the awkward scenario you're describing. This fix may solve it well enough for now.
Ideally you'd be able to "zoom out" the image during cropping and have it correctly encompass the full image. We currently use https://github.com/ivpusic/react-native-image-crop-picker and there are no good alternatives that I could find. It is actually a wrapper around https://github.com/TimOliver/TOCropViewController. There's some discussion of this desired behavior here but it's not done: TimOliver/TOCropViewController#357. Forking an objective-c module would not be ideal so let's hope my attempted fix is sufficient.
