In this case, you should still set allow-blank to true (to configure the behavior of the drop-down menu) but specify the field it maps to as required: true in your validation rules (so the form can't be submitted until the user selects a value).
I'm trying to mimic the behavior of the HTML <select> tag as much as possible here.

Maybe the thing to do here would be to expose an additional attribute flag that allows you to override the default behavior of selectField for the case where a value is required but you don't want an item pre-selected.
