It seems other people are having the same issue: storybookjs/storybook#8140. In fact there are lots of issues with props not showing: https://github.com/storybookjs/storybook/issues?q=is%3Aissue+is%3Aopen+sort%3Aupdated-desc+label%3A%22block%3A+props%22+label%3Abug.
Apparently there is work in progress for the next release: storybookjs/storybook#8435.
A quick test reveals that removing react-scripts fixes the issue for us, but means we'd need to add support for jest, eslint, style loading etc.
