Hi Chris, the methodology is described here: https://theshiftproject.org/en/carbonalyser-browser-extension/ and yes, the value kWhPerByteDataCenter = 0.00000000072 is from the 1byte model developed by the Shift Project.

kWhPerByteNetwork - the estimated energy transferring packets of data through the network (the networks between me and github)

Right!

kWhPerByteDataCenter - the estimated energy used by the datacentre(s) running the web application I am connecting to (i.e. github's servers)

Correct!

kWhPerMinuteDevice - the estimated energy from the device you're holding or using (i.e. my phone, or a laptop)

The estimation is based on a laptop with a wifi connexion

For me, hosting and data center energy usage is minor. For example, a blog with 1000 visitors/day, there no big difference of impact if it is hosted by a green hosting or a regular one.
In the internet, the most impactful for the environment can be summarized in two things: video / streaming and the obsolescence too fast of user terminals.
