The biggest reason is the fact there are already many great ways to host production websites. The traditional web servers like IIS, Apache, & NGINX are all mature products with thousands of dev hours behind them, and they're dedicated to production hosting. Fenix is really designed for the developer/designer that intends to eventually put their code on one of these servers.
I have a completely different project for building more advanced/production web systems with Node.js, called NGN. I haven't released it yet, but I've been building and rebuilding it over the past 2 years. I am targeting a release to coincide with Node.js 1.0.
