It seems you can define your own Label in GitHub/GitLab/... and just use its String.
If you want to add your own custom you can append the attribute custom_labels to Dependabot::PullRequestCreator.new (https://github.com/dependabot/dependabot-script/blob/main/generic-update-script.rb#L173) like this
pr_creator = Dependabot::PullRequestCreator.new(
source: source,
base_commit: commit,
dependencies: updated_deps,
files: updated_files,
credentials: credentials,
assignees: [(ENV["PULL_REQUESTS_ASSIGNEE"] || ENV["GITLAB_ASSIGNEE_ID"])&.to_i],
