You can pass in the Datatables configuration to the datatables_options when initializing the table

    datatables_options: {"paging": true},

I use like this.
But still no change. Table is sorted by 1st column only.
any clues?

The options you pass in need to be properly formatted as an object, like so:

CsvToHtmlTable.init({
    csv_path: 'data/all_files.csv', 
    element: 'table-container', 
    allow_download: true,
    csv_options: {separator: '~', delimiter: '~'},
    datatables_options: {"paging": true, "order": [[ 5, "desc" ]]}
});
