Angle brackets have to be escaped like that if you want them to be visible. Otherwise they will be assumed to be html markup.

This can indeed be done by changes to the Mammoth code (in the conversion.py and options.py files), but this is really not recommended.

The easiest way is to use a custom style-map file (as mentioned earlier by @dougmassay), for example with content like this:

b => b
i => i
r[style-name='Strong'] => b

I tried a lot of combos in style-map but I don't know how to see <! as <
