Looks like net/http prefers these to be String keys so you can adjust that:

deliver_by :twilio_messaging do |config|
    config.json = ->{
      {
        "From" => "+12345678901",
        "To" => "+19876543210",
        "Body" => "this is a test"
      }
    }

I will also add a stringify_keys to the Twilio Messaging delivery method to account for that so you can use symbols or keys.
