Current GDNative documentation is not the best, but the demos linked in the docs, like this one, are pretty good.
I will create another repository with a full working example and link it in this one, I'll let you know when it's done!

Do you think a sample project would be enough or should there be a more thorough explanation about how it works and how to setup your own project?

I have created the example project repository.
It still needs more information, more testing (mainly on Windows platform), support for other platforms (OSX, Android, iOS), NativeScript examples...
But it's a start =]
