I recall there being some discussion about this, but also couldn't find it.
With the tags, it seems like it would be too generic. Maybe just the ability to assign any color to any field would suffice, and the ability to turn it off. So then you could customize it for yourself, and others could use it, or not.
Or possibly a mapping per template of a field to a color based on name, with the ability to override. Maybe using the new metadata support, or tcl directly.

I think syntax highlighting is a very good example of a problem requiring similar solutions, so I think that’s a great place to take inspiration from.
I imagine the tags would not be a fixed set, but a mix of some mostly standardised with assigned colours and some bespoke for a specific format, with all the colours user assignable.
It will be a balance, we don’t want to have a limited subset which might be useless for many formats, but I don’t think we want to make people assign the colours per format either (certainly not per loading of a template!), imagine a syntax highlighter that makes you pick the colour of every type every time you open your text editor or for every new file type. Nobody has time for that when some minimal standardisation can do it for free.
