@mattansb I didn't follow closely some recent changes in Hugo, there might be some related to logical expression evaluation. Before I often used draft: "true" to make it work. In the recent version of Hugo (v0.55.6/extended), I can use draft: true and it works (i.e. no draft pages are shown).
Which version of Hugo are you using? Have you tried to switch between draft: true and draft: "true" in the preamble?

I'm using Hugo 0.55.6 (via blogdown) - I tried both draft: true and draft: "true", but both render the post.
My current solution is to save my drafts in a folders two levels up, where nothing gets rendered...

I'm not quite sure about the root cause. Have you checked the build commands with Hugo? If you enable `--buildDrafts` or `-D`, it will generate drafts too. Generating drafts or not is a Hugo built-in feature regardless of the theme (unless the theme explicitly use drafts).
Maybe a good way to verify is to use another theme to see whether the drafts are generated. Then we can figure out issues with themes or Hugo. Other than that, you may need to check the Hugo version as the one I used works normally with `draft: true`.
Perhaps another Hugo option can be relevant as well, that is `--cleanDestinationDir` for cleaning the destination directory before generating new contents.
