It's not particularly well-documented, but if you run ngrok with "-log stdout", it won't display its terminal interface and will write its log to stdout.
There is also a way to disable the web interface/inspector, but it might not be working in the newest version. I'll take a closer look and document them.

At the moment, there is no way to change the logging level, but it would be good to open another bug on the project to support customized logging levels.
The web interface works for traffic across multiple tunnels provided you start multiple tunnels using the configuration file and the "ngrok start" command: https://ngrok.com/usage#config

@inconshreveable how am I getting the random subdomain when running ngrok in headless mode and not being able to access the web interface on port 4040?
