So I don't have a great explanation for why this works, but I played around with your code and was able to fix the double event call by storing $("#test") in a variable first, and then calling .on('select.editable-select'), like this:

var test = $("#test")

test.editableSelect();

test.on('select.editable-select', function (e) {
  console.log('a')
});

I know it's not the most elegant solution, but hope that helps :)
