That stdin log is actually not bad at all -- in fact, thanks to your report I am going to fix that in the entrypoint-demoter tool via itzg/entrypoint-demoter#1
As for the reported EULA not being set, that is very strange since your compose file looks and works fine for me. If you could pull the latest image and try that, it includes an extra output line that shows what value for EULA the startup script thought it saw.

...you'll miss out on some newer features, but another thing you could try is referencing the specific tag 20190806, which is around the point you noticed it working

The latest image now includes the clarified log message:
