Hum - I like the different choices.
Maybe we need to split offers for stuff (couch, art, etc.) and offers for service (mow the lawn, cut your hair etc.)? In both cases we have some different options: trade for money, trade for other service or stuff, give out/do for free.
Not sure on exact wording though...

Exact wordings will surely come later. While I agree that maybe we do need
to split services/products, I also like the fact that there are less clicks
to achieve the same result. I'm not torn either way, they both have their
advantages.

I think checkboxes would be good for this, that's probably the easiest (UI wise) for people to use to select one or more of a finite number of choices. I don't think we need to word it differently for services vs stuff? I mean, I might trade stuff, or services, or sell stuff or services... it all seems to fit the same to me.

Services are for sale/exchange/gift, stuff is for
sale/exchange/rent/lend/gift. That's a pronounced difference in
labeling/searching.
As far as the currencies, when you're filling out your offer form, you
should be able to add in as many of your currencies as you want.
It could look like this:
20 [CAD] for ONE HOUR
_____ [drop-down of currencies I wrote in my profile] for ___________
