In the output you shared please read
Note: This is an unofficial build, please report bugs to the project responsible for this build and not to the Julia project unless you can reproduce the issue using official builds available at https://julialang.org/downloads
Also, I'm not sure Julia should fiddle with your system default dynamic loader paths, you'd have the same problem with any other program requiring Cocoa.

The fix to this is to use a non-broken install of Julia (either from juliaup, https://julialang.org/downloads/, or built from source).
