This has been a recurring issue with Julia crashing when Ipopt throws exceptions internally. You should provide Ipopt with a feasible starting point so that it doesn't go off and try to divide by zero.

Where are the binaries from? If it's the generic Linux binaries, could try temporarily moving the bundled libgcc, libstdc++, etc from lib to some backup location.

Can also try IpoptNLSolver from AmplNLWriter.jl as a test. That'll run in a separate process, though it may also handle the initial guess slightly differently so may not be perfectly apples-to-apples.
