It's a great idea and something that AppTrap already does. :p
Unfortunately, with one of the newer versions of the Sparkle updating framework, the old versions of the applications that are automatically placed in the trash are renamed with (I believe) a date.
I'm toying with the idea of doing string manipulation, but it seems kind of hack-ish. Do you have any ideas?

Oops I guess I should have looked at the code first :$
I didn't realize that was a Sparkle thing. I guess you could call it hackish but if Sparkle appends the date in a consistent way it should be possible to consistently detect and remove it. The potential for error is there but I think it's mostly theoretical.
If lightning struck and someone had an app named with the date and one named the same thing without the date and they removed the dated one, and then apptrap decided not to ask if they want to remove preferences... too bad. Such an edge case probably isn't worth worrying about. It's really contrived.
Are there are hazards? I can only think of that one. Maybe I should make a prototype and just try it for a while and see what happens.
