Hi @besty3 - thank you for this suggestion to the Library Carpentries Tidy Data lesson. We added a help wanted tag in 2021, so this is something that our lesson Maintainers want to work on. I'm beginning that work in a new branch and will be adding more information there.
Given that there is already a paragraph about useful operations to work with dates, but there is not a section devoted to that topic, it seems that a section on functions would a good first part of the episode. It would start with the current example (DAY(), MONTH(), YEAR()) and then could go into the material you have suggested (going the other way).
