Load a game with the core, press F1 to open the menu, go to Options and change the "Screen Layout" option to a left/right or top/bottom type.

Should be the same process, but you might need to enable a gamepad combo to open the menu while in game. Look under Settings, Input, Menu Toggle Gamepad Combo.

You're better off going to the Libretro forums or their Discord for support. There should be some Switch users around who might help.
