Try git commit does that also not work. crontab -e sais: "editor or filename too long", i.e. it seems to impose some arbitrary restriction which is exited by the script used by with-editor. We cannot do anything about that.

git commit and git rebase work as expected.

So does bash edit (C-x C-e) in term-mode.

So the issues indeed is that crontab decides that "editor or filename too long". That's unfortunate and means it cannot be used in combination with with-editor.
