The grid defines how the tiles are organized. If you have an existing set of tiles that work with GLOBAL_GEODETIC, that you won't be able to use that set of tiles with another incompatible grids.

The question is what you really want to do. I'm guessing here: You want to limit the extent of the layer in the capabilities?! This is currently not supported without any source with coverage. You could create a seed_only source with a coverage and use that as a dummy to get the extent. (You might need to update to nightly to get the expected behavior)

I believe I answered my own question yesterday evening as I was going through my workflow and I think you guessed correctly. I did not realize that providing a grid extent/max extent for a source cache altered the zoom levels associated with that data. I was trying to seed the zoom levels as though they were still projected in global geodetic.

I was trying to generate a cache and limit the seed coverage within the capabilities like you said, but it does not work that way, and probably rightly so. Limiting the coverage in the seed config appears to give me the desired results.
