Ok. I figured it out, it was a dumb mistake on my part, I was publishing emails but had emailAddresses field on core data model.
Before closing this issue I'd like to ask if there's a way of sending parameters during user creation, for instance i would like to create an empty array of items on user creation etc.

Good to hear you figured out what the problem was.
As for your question, I think Accounts.onCreateUser may be what you are looking for.
