I've changed the testing folder to

There are several large images there (4000x3000) which may be easier to tell when something is happening. The other images were pre sized to 1024x768 for the iPad already.

No, AI is not intended to work like that and would have no way of knowing that you want the AI cache files in different locations depending on which folder it's in. You could hack the file to do it yourself perhaps, or find a way to get a different instance of AI working in each directory and have each instance use its own cache directory.
The problem is a bit out of the normal scope of a website setup.

I figured as much. I shall see if there is a way to build the manifest.php file (shown earlier) to parse the appropriate folder.
Or see if the A-I script can understand the location of the html file it is being called from to build the ai-cache folders at that location.
It does work very well, other than the small problem of killing the cache manifest. My phone tests were a lot quicker than before.

I resolved this image by putting my manifest cache manifest.php call BEFORE the cookie setting. That made it work correctly.
