Alright... I solved my own question with this: https://github.com/senchalabs/connect/blob/gh-pages/tests.md#patch . A res.emit('header') (before my res.write()) will force the cookie.update(). I didn't realize connect did this special stuff.
With that said, it might be interesting to have a version of this lib that doesn't require connect. Though maybe I've got a minority opinion on that.
