I could see developing individual collections for key assets, like WOA, for instance. I would consider what attributes are necessary to define and query the data to determine what belongs in the same collection.

I built something similar on mistral: https://github.com/aaronspring/pymistral/blob/master/notebooks/intake_observations.ipynb https://github.com/aaronspring/pymistral/blob/master/intake/obs.yml
However, this is rather a wrapper around the different paths of observational datasets which have very inconsistent filename and directly relies on intake-xarray.
