I have done a research let's encrypt isn't supporting any kind of ip addresses!

I not really want to do it over a domain because I have had 3 websites on same server someone hacked them and now all are broken I used wordpress latest!!! So I don't want to have a risk on my personal files that's why I access it over the servers ip adress!

That is to be expected. You need a fully qualified domain name for Lets Encrypt.

As an alternative you could create a private local certificate and use that instead... but you will always have a browser warning and your client access will be slow.

Nextcloud is extremely resilient. So as long as you stick to best practises your data should be quite safe. That is your decision.
