Thanks for the feedback, i will take a look.
I think the Problem is the ListenFIFO= in combination with ExecStop

I ran into this as well, but with the vanilla minecraft server on a fresh Ubuntu 22.04
Looks like I fixed it for me:
I added RestartPreventExitStatus=143 to the minecraft.service definition:
https://www.freedesktop.org/software/systemd/man/systemd.service.html#RestartPreventExitStatus=

I can confirm that on Debian 11 using Openjdk 17 this is an issue too and RestartPreventExitStatus=143 fixes it. I'm adding a PR for that...

I just used the updated version 6.1.1 to update my minecraft server and now it works out-of-the-box.
