@rsignell-usgs - you can pin version number for either/both of these in your config. For the jupyter version, you want to specify a jupyterlab version in your environment file. In our binder config, we actually don't specify which version of jupyterlab to use, that comes from either your environment file or from repo2docker (way upstream).

@jhamman , okay, I guess we need to pin this in https://github.com/pangeo-data/pangeo-example-notebooks/blob/master/binder/postBuild#L3 as the pangeo-example-notebooks are currently not building on pangeo.binder.io.

Pinning compatible juptyerlab and extension versions is the solution.
