Apologies, not something that fixes the resolution issue - but I'm also on ultrawide but I can't seem to inject the game without it crashing, can I ask how you got it to work?

Sure - Here's my setup
Using an Quest 2, I connect to the oculus desktop app using oculus link (air link works as well). Then started Pinball FX. Now start the mod and make sure to use OpenXR in the settings. That gives me a stable VR experience.
Note that I did try steamVr and OpenVR in the mod as wel, but that did cause some instability and crashes
from uevr.
