You are confusing the handlerCallback and the PreSerialize and PostSerialize hooks. An HandlerCallback is a custom handler defined in the serialized object itself. It has to return the serialized data.

I should have renamed my function in the example, "postSerialize" is definitely counter-intuitive there. Sorry for the confusion.

Are you saying that:
public function doSomething(GenericSerializationVisitor $visitor) {
$visitor->addData('blah', 'blah');
return $visitor;
}

@wjaspers no, an handler is responsible to do the serialization work, and so should return the serialized data.
If you only want to add some extra data, letting the standard serialization be applied for the properties of your entity, you should use the PreSerialize or PostSerialize hooks (and so not using the @HandlerCallback
annotation but @PostSerialize
or @PreSerialize
).
However, these method don't have access to the Visitor (is it intended @schmittjoh ?) so you would have to use a listener instead of a PostSerialize callback
