UPD: it also happens on 32 bit version (which has a different allocator according to #2790 (comment)), however it happens earlier and the app just crashes, after allocating around 3 gb or so (I assume its because of it being 32 bit). I also disabled all system modifications and ran on stock LOS 20, still happens on arm64 version too.
UPD2: I completely removed magisk and updated LOS to latest build. Still happens. It seems it mostly happens when working with files i.e. uploading/viewing images or videos. The app would exponentially allocate more and more ram, starting slowly but allocating 12 gb of ram in around 20-30 seconds.

The problem has not been resolved!
Personally, after some time, simplex begins to consume all the RAM, as well as the swap file, a total of 55 GB!
