Is there a recommendation for how to setup the shared folder? NFS?
No recommendation. It depends on your network topology. NFS is fine - anything that all the instances can see.

Can I just have a single linux box hosting this or will Exhibitor and
Zookeeper fail when that box is rebooted/down?
That's fine for testing purposes, but in Production you want 3 or 5 instances.

Thanks for the reply. For the second question I meant can my shared
configs be on a single server? Will exhibitor gracefully handle that
directory dissappearing? will zookeeper continue running?

Not currently. I've thought of adding a backup feature of some kind for just this scenario. I'll leave this issue open and add it when I can.
