Haven't had too much time to look into the actual configuration of redis sentinel which is why I haven't added support. I am more than happy to hear somebody else is looking at adding it! It will be tough for me to suggest how to implement it given my unfamiliarity with how to set it up. Is it just a set of directives that go in the configuration file? I assume it's the same binary as redis server, just with a whole different conf.
The thing that's a real pain about it is that I need to make a push on a new version of the cookbook that separates the idea of installing redis from the idea of configuring it. This was a pretty big misstep when I wrote this cookbook. Maybe you could hop on IRC and we could discuss? I'm geekbri on irc.freenode.org. I'm usually on between 8am - 4pm.
