You can define your exceptions array anyway you want, so nothing prevent you to merge with other time ranges such as the open hours of the given day in the typical week:
$typicalWeek = [
'monday' => ['09:00-12:00', '13:00-18:00'],
'tuesday' => ['09:00-12:00', '13:00-18:00'],
'wednesday' => ['09:00-12:00'],
'thursday' => ['09:00-12:00', '13:00-18:00'],

];

Automate it on need so you don't need to know the day of the week:
