It uses the google guice shaded in the testng jar rather than one defined in project eclipse dependencies

Did you try the option of the TestNG plug-in that lets you use the project's testng.jar file instead of its own?
Maybe it will play well with the Maven plug-in in this case. Please email me if you need more details because I can think of a few things that might go wrong with this idea (but it's the right direction).

cannot find the option here http://testng.org/doc/eclipse.html (probably not available with m2 ? )
I use the update site http://beust.com/eclipse
