Options are passed to node-sass.
Adding indentedSyntax: true, to the options fixed the issue.

Use these settings for rollup-plugin-scss plugin to enable minificaiton of output:
scss({
output: 'dist/renderer/index.css',
outputStyle: 'compressed' or 'expanded',
}),
