Actually, this depends on how you're using SASL. I'm using SASL with dovecot like this :

# Auth against external daemon (usually dovecot or cyrus)
smtpd_sasl_auth_enable = yes
smtpd_sasl_type = dovecot
smtpd_sasl_path = private/auth

And my RHEL system doesn't require any of the additional sasl packages, it only has the main one and the lib one, which are both requirements of the main postfix package. So nothing to be specified and it 'just works'.

But to solve your particular case, I would definitely welcome a change where one could pass a parameter such as sasl_types => [ 'plain', 'gssapi' ] to get the packages installed on RHEL type systems. Pull Requests welcome :-)
