What sort of frequency would be good here? Maybe daily (e.g., nightly builds)? I could make a cron that checks the build number as compared to the latest Mac download and if we have a build with newer commits, upload it using the above.

this is now done in the new build2.sh
script. Since github downloads are gone we can push directly to s3 and this is done currently for every new git hash of tilemill or tm2 (can consider lessening this in the future): https://github.com/mapbox/tilemill-builder-osx/blob/master/build2.sh
