Tom, great we should chat about this. I've been planning on adding support to mapnik proper for trying to search for system fonts. But this could also be done by TileLive.
Also, in Mapnik trunk we now support registering fonts in the XML like
<Map font_directory="/path/to/fonts" ...>
which will recursively find and register all fonts within that root.
This should allow TileLive demos to package any custom fonts if that is easier than registering system fonts.
But I agree that registering system fonts is a must.

Added this side in 7023a33 and c74399d6e30744732e901e335302aa5efe6d3eb6 - I'll open up another ticket for more advanced font management & additions.
