I like the option D, because it gives us a clearer API and provides users more conversions than we have in config right now(it has various slices and maps).

I really dig D, it lets us slim down our library without limiting users.
In the README we should add a section which shows how to use this library with spf13/cast, kind of like how https://github.com/russross/blackfriday shows how to use with github.com/microcosm-cc/bluemonday.
Ideally we don't need to invent anything in this space, nor do we need to take a dependency on anything. Simply showing the user how to use config with the other library should be the goal.
