README doesn't indicate how to set development or production mode about lein-ring HOT 3 OPEN

I'll update the README to be clearer, but in essence, the only "development mode" is "lein ring server" without the LEIN_NO_DEV environment var set.

This seems not to be true. lein with-profile production ring server still uses auto-reload and stacktraces middlewares.

It's easy to fix though:
