Not sure if tab style would be the way to go. I feel like a horizontally scrollable bar would be more convenient. The order could set by creation date, most used or custom sorting.
It would also open up the option to choose multiple categories at a time instead of a singular one. Here's a mock up:

I would also like to add to this with some suggested implementations:
- The category selector could be placed under the weekday row and it would move horizontally.
- An option to assign a category could be added inside the habit options
